Since its founding in 2003, the estate has risen quickly to prominence, marrying the natural warmth of Hawke’s Bay with a refined, site-driven winemaking style.

The estate farms three distinct vineyards: Te Awanga, Bridge Pa, and Gimblett Gravels, each contributing a unique voice. Te Awanga offers maritime freshness and aromatics; Bridge Pa delivers depth and fruit purity from its rich red metal soils; and Gimblett Gravels, with its stony, heat-retentive ground, brings structure and concentration — especially to Syrah, Cabernet Sauvignon, and Merlot. All sites are sustainably managed, with careful canopy work and precision harvesting to retain acidity and site character.

In the winery, winemaking is clean, elegant, and expressive of place. Chardonnay is whole-bunch pressed and fermented in French oak, with full malolactic and bâtonnage to bring layered texture and length. Syrah and Bordeaux varieties are hand-picked, fermented in small lots, and aged in carefully selected oak — balancing fruit clarity with structure. The Icon wines — Airavata Syrah, Hieronymus (Bordeaux blend), and Salome Chardonnay — represent the estate’s most age-worthy, small-parcel expressions.

The wines are finely composed and site-reflective. Chardonnay shows white peach, citrus, and toasty oak, with saline drive and flinty precision. Syrah is floral and spicy, with dark berry, violet, and pepper over fine tannins. Hieronymus, the flagship red blend, layers cassis, graphite, and warm earth, while Rosé and aromatic whites offer freshness and texture with restraint. Across the range, Elephant Hill’s wines carry a signature of calm poise — balancing richness with linearity and polish with quiet power.
