Gracias a Dios began as a small, independent project, guided by a simple philosophy: to make mezcal the way it has always been made—by hand, with patience, and in harmony with nature. The brand partners with local maestros mezcaleros who harvest mature agave plants by hand, cook them in underground earthen ovens, crush them using a traditional tahona, and ferment in open-air wooden vats before double distillation in copper stills.
The result is a mezcal that is bold yet balanced. Their core Espadín expression is smooth and vegetal, with notes of roasted agave, green herbs, and subtle smoke. Other varieties—such as Tobalá, Tepextate, and Cuishe—showcase wild agave’s incredible diversity, offering layered flavour profiles that range from floral and spicy to mineral and earthy.
