
Lustau
Bodegas Lustau is one of the great names of Jerez — a house where tradition, precision, and complexity converge in a portfolio that spans the full spectrum of Sherry styles, from bone-dry to unctuously sweet. Founded in 1896 by José Ruiz-Berdejo, Lustau began as an almacenista, ageing wines for others. Today, it is revered as one of the region’s most complete and innovative producers, crafting wines that combine historical depth with modern clarity.
The bodega owns vineyards in all three corners of the Sherry Triangle — Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda — allowing it to capture the subtle variations in terroir, flor development, and oxidative ageing unique to each town. The chalky albariza soils and Atlantic winds provide the foundation for finesse, while the solera system allows for the seamless layering of vintages, building complexity over time.
Lustau is especially known for its wide range of single-town Finos and Manzanillas, each expressing distinct microclimates and flor characters, as well as its remarkable Amontillados, Olorosos, and Pedro Ximénez sherries, aged slowly in cathedral-like cellars. Their Almacenista series pays tribute to the small independent ageing houses that historically supplied the larger bodegas — a rare glimpse into hyper-specific barrels, often aged for decades in secret.
In the cellar, each wine follows its own arc. Biological ageing under flor preserves delicacy and salinity; oxidative ageing reveals power, warmth, and roasted complexity. Everything moves slowly, shaped by evaporation, oxygen, and time. From the classic Reserva bottlings to the limited VORS (Very Old Rare Sherries), the wines are handled with extraordinary patience and precision.
The wines are intricate and expressive. Fino del Puerto is saline and chalky, while Manzanilla de Sanlúcar is briny, lifted, and sea-kissed. Amontillado Escuadrilla shows walnut, dried citrus, and firm acidity; Oloroso Don Nuño is rich and savory, layered with caramelised nuts and leather. PX San Emilio is lush and unctuous, with dried fig, coffee, and a finish that lingers like velvet. Across the board, Lustau’s sherries are deep, balanced, and resonant.
