Pale gold with a delicate, persistent mousse, Royale Réserve Non Dosé NV (65% Pinot Noir, 30% Chardonnay, 5% Meunier) opens with a precise, mineral-driven nose—lemon zest, white peach, chalk, and raw almond, accented by subtle brioche and smoke. Sourced primarily from Premier and Grand Cru vineyards, the base wines are vinified in a combination of stainless steel and oak, with partial malolactic fermentation and a significant portion of réserve perpetuelle. Aged 3–4 years on lees, it is bottled with zero dosage, preserving its crystalline purity. The palate is taut and vibrant, showing citrus oil, orchard fruit, and a savoury, saline edge. The finish is long, dry, and mouth-cleansing. A structured, gastronomic Champagne—pure, poised, and unmistakably Philipponnat.
