Mondillo Wines is a boutique estate tucked into the rugged slopes of Bendigo, Central Otago — a region known for its intensity, and a winery defined by elegance, care, and quiet ambition. Founded in 2001 by Domenic Mondillo, a New York-born viticulturist of Italian heritage, the project is built on deep vine knowledge and a hands-on philosophy that sees every detail, from soil to bottle, as part of a singular expression of place.

The vineyard lies on the north-facing hills of Bendigo, one of Central Otago’s warmest subregions. Glacial soils, low rainfall, and extreme diurnal shifts give the wines natural structure, vibrant acidity, and fruit purity. The estate is entirely sustainably farmed, with a focus on low yields, hand harvesting, and meticulous canopy management to ensure balance and concentration in every bunch.

Winemaking is small-scale, exacting, and restrained. Pinot Noir is hand-sorted, destemmed, and fermented in small open-top vessels with gentle extraction and ageing in French oak (typically 30% new). Whites — especially Riesling, a Mondillo signature — are whole-bunch pressed, fermented cool, and aged in stainless steel to preserve detail and line. Every wine is bottled onsite, with minimal intervention and a clear focus on purity and finesse.

The wines are supple, lifted, and composed. Pinot Noir shows wild cherry, thyme, violet, and schist-driven minerality — finely structured, precise, and built to evolve. Riesling is pristine and luminous, with citrus, white blossom, and stony length, made in both dry and medium-dry styles with impeccable balance. A limited-release Late Harvest Riesling completes the portfolio — honeyed, floral, and beautifully restrained. Across the range, the wines reflect clarity of intent and a deep understanding of site.
