Fresh black cherry and plum are front and centre, with a touch of wild berry and a flick of almond on the finish. This is a bright, pure expression of Dolcetto from Monforte d’Alba — fermented and aged only in steel to keep things clean, vibrant and fruit-driven. A short maceration of around 10 days softens the tannins without losing shape, giving the wine a smooth, lightly grippy texture that holds its own with food. Paulin blends fruit from multiple vineyards to achieve this balance, staying true to the everyday drinkability Dolcetto is known for. It’s a great match for ragu, grilled meats or a hunk of hard cheese.
