A wine where its primary ferment begins in the vineyard (pied de cuve) then continues in the winery, delivers a bouquet of mystery and harmony, variety, wild flowers and apples, then citrus and some wild peach-like suggestions. Little to no herbs. Dry, crisp, highly textured with a backbone of acidity accentuating the flavours of citrus fruits and apples, more wild fruits and flowers and a chalky textured mineral complexity. Well made, taut and youthful, best drinking from late 2024 through 2030.
